Ingredients
1 cup miso paste
½ cup sugar
½ cup sake
1-2 pounds black cod fillets
Instructions
Combine the miso, sugar and sake in a small sauce pan. Heat over medium high while whisking until just barely boiling. Turn off the heat and let it cool completely.
Transfer the cod filets to a ziplock bag and add the miso sauce. Massage the sauce into the fish and allow it to marinade in the fridge for 1 hour or up to 3 days.
Preheat your oven's broiler. Set the top rack 5 inches below the broiler.
Transfer the filets to a nonstick baking dish and pour the miso sauce over top. Broil for 5-8 minutes or until the sauce has caramelized. You can also sear the presentation side of the fish in a nonstick pan for about 30 seconds for a more intense caramelization.
