Fried Flying Fish
Hands down, one of the most popular dishes in Barbados is Fried Flying Fish. The crunchy and golden outer crust compliments the tender, juicy and not to mention flavourful flying fish. Flying fish is certainly best fresh. Try this recipe!
Fried Flying Fish
INGREDIENTS
10 flying fish steaks
2 limes
2 TBSP Salt
1.5 Cups Water
3 TBSP Bajan Seasoning
2 Cups seasoned Breadcrumbs
1 Cup Flour
3 Eggs
Canola Oil
METHOD
Combine the raw fish, juice of the limes and the fruit them selves, salt and water in a bowl. Allow to sit for 10-15 minutes. Rinse the fish and cover in the Bajan Seasoning. Place the flour in one plate, the breadcrumbs in one plate and the eggs (beaten with salt and pepper) in another bowl. Pour the canola oil in a frying pan to just cover the bottom (about a 1/8-1/4 inch layer) and heat. Dip the fish in the flour, then egg, then bread crumbs and finally in the oil to fry. Repeat with all the fish.
