
Salmon BLT
Ingredients
2 tablespoons olive oil
1 pound salmon, cut into 4 even pieces
Salt and freshly ground black pepper
1 lemon, zested
8 bacon strips
¼ cup mayonnaise
4 ciabatta rolls, halved
8 pieces butterhead or Boston lettuce
2 large tomatoes, thickly sliced Directions
1.Preheat the oven to 350°F. Heat the olive oil in a medium-size oven-safe sauté pan over medium heat.
2.Season the salmon with salt, pepper and lemon zest. Add the salmon to the pan, skin side down, and cook for
