If you're looking for hot and spicy, this isn't it, but the taste is wonderful. The jalapenos carmelize in the honey glaze. They bring only mild heat but add great depth to the flavour. This is a keeper.
1/4 cup of honey
3 jalapenos, sliced thinly in rings
2 tablespoons apple cider vinegar
1 tablespoon soy sauce
4 salmon fillets, skin on, about six ounces each
Preheat oven to 400.
Heat honey, jalapenos, vinegar and soy in a small pan. Bring to a boil then simmer on low for 10 minutes. Set aside.
Lightly oil a medium baking pan and the fillets in the pan. Brush with oil and lightly salt. Spoon the glaze onto the salmon.
Roast for 14 minutes, basting halfway.
Baste again then top with a squeeze of lime, a sprinkle of salt and some chopped cilantro. Serve over rice, which will nicely soak up any extra sauce.
