Right so let’s talk fresh fish! And why if you remember these simple and easy steps you will make choosing fresh fish so much easier:
Buy your fish directly from a fishmonger rather than pre-packed from a supermarket
Buy fish whole and ask your fishmonger to fillet, scale and pin bone it for you
Why? Simple ….. buying fish whole is the easiest way to ensure the fish is actually fresh
Check to see if the fish’s eyes are clear (cloudy eyes are a good indication that the fish is not fresh)
Feel the fish, check the skin/body is free of bumps and bruises
The fish should not smell fishy – rather smell clean and ‘of the ocean’
Where possible to buy line-caught fish (usually tastes better because the fish hasn’t been stressed and is more sustainable too)
Oh and don’t forget to ask your fishmonger “what’s in season", so you can get your hands and tastes buds around fish that is eating well and usually at a sensible price too WIN-WIN!
